I love this pancake recipe from thepaleomom.com. It contains no processed flour or icky ingredients. The pancakes are made from plantains (find them near the bananas at the grocery store). I had never cooked with plantains until trying this recipe. I love pancakes made with almond flour too, but this is a nice nut-free option. I throw all of the ingredients into my Vitamix and then cook ‘em up. I always make extra to freeze and keep on hand for busy mornings. Super easy and super delicious. Bet that’s good too! You can also make pancakes with just bananas and eggs. Blend 2 eggs and 2 ripe bananas together and cook!
