Plantain Pancakes (nut-free/grain-free)

Plantain PancakesI love this pancake recipe from It contains no processed flour or icky ingredients. The pancakes are made from plantains (find them near the bananas at the grocery store). I had never cooked with plantains until trying this recipe. I love pancakes made with almond flour too, but this is a nice nut-free option. I throw all of the ingredients into my Vitamix and then cook ‘em up. I always make extra to freeze and keep on hand for busy mornings. Super easy and super delicious. Here’s the link:

Keepin’ it real: Use REAL maple syrup. Not an imposter like Aunt “Jemnasty” which is full of high fructose corn syrup.

    • Bet that’s good too! You can also make pancakes with just bananas and eggs. Blend 2 eggs and 2 ripe bananas together and cook!
