Plantain Pancakes (nut-free/grain-free)

Plantain PancakesI love this pancake recipe from thepaleomom.com. It contains no processed flour or icky ingredients. The pancakes are made from plantains (find them near the bananas at the grocery store). I had never cooked with plantains until trying this recipe. I love pancakes made with almond flour too, but this is a nice nut-free option. I throw all of the ingredients into my Vitamix and then cook ‘em up. Keepin’ it real: Use REAL maple syrup. Not an imposter like Aunt “Jemnasty” which is full of high fructose corn syrup.

    • Bet that’s good too! You can also make pancakes with just bananas and eggs. Blend 2 eggs and 2 ripe bananas together and cook!
