This is my kids’ favorite way to eat eggs. The novelty of having an egg that looks like a muffin goes a long way with kids. I usually make them the night before and then they’re ready to pop into the toaster oven on a busy morning. Eggs are a wonderful brain food. The choline in eggs promotes memory and focus – good for children and adults. And, as a nutrient dense protein, it will keep you full until lunch time. Buy pastured eggs if they are available to you. If not, splurge for the highest-quality Omega-3 eggs you can afford from the store. They are a great source of DHA and EPA.
Egg Muffins
- Grease a 12 cup muffin pan (I use bacon grease or butter) OR use silicone muffin molds as seen above (can buy here).
- Sprinkle each cup with any fillings you desire – bacon crumbles, sausage, broccoli, cheese, etc (or nothing at all!)
- Whisk 1 dozen eggs together and fill each muffin cup over the desired fillings.
- Bake @ 325 degrees for approximately 15-20 minutes (depends on your oven – keep checking when close) or until firm to touch.
- Enjoy!

Jude – Eggs are an amazing source of nutrition, but it’s always a good idea to change things up. I usually have eggs 4 days a week (about 2-3 per day).
