Dear God: Thank You For Butter

Did you know that our brains are almost 70% fat? People are very fat phobic these days, but fat is a critical component of our physiology. Fats are essential in giving us energy, forming our cell membranes, managing inflammation and absorbing the fat soluble vitamins: A, D, E and K. It also gives our food flavor and helps us feel full longer. God provided wonderful sources of healthy fatty acids for our bodies to function optimally – avocados, meat and fish, nuts and seeds, olive oil, and butter. Yes, butter! Refined fats such as margarine, canola and vegetable oils are extremely difficult for the body to process and have zero nutritional value (thumbs down!). In fact, they are toxic and create inflammation within our bodies. Keep the food you eat on your God radar. The whole foods He provided are the ones we should eat. If it’s been highly processed, hydrogenated, and stripped of minerals – don’t eat it.
And he took butter, and milk, and the calf which he had dressed, and set [it] before them; and he stood by them under the tree, and they did eat. – Genesis 18:8
