Skillet Lamb Chops and Vegetables

DSC_0801Dinner Inspiration: Skillet Lamb Chops, Roasted Zucchini/Radishes/Carrots, Green Salad with Feta Cheese and Avocado.

What’s nice about this is that 2/3 of the plate is vegetable. I used Extra Virgin Olive Oil, lemon juice and salt to dress the salad. The EVOO and avocado in the salad are wonderfully healthful fats!  And the lamb chop is a delicious source of protein. Not gonna lie – I went back for more lamb chops!
