Pesto Cod over Spaghetti Squash

DSC_0899We eat fresh fish 1-2 times per week. It would be more often if I had better access to the grocery store (it’s an hour away).  Fish is an easily digestible protein and an awesome source of long chain Omega-3 fatty acids (which our body can assimilate easier than Omega-3 short chain fatty acids like flax, chia, and walnuts). Fish also provides important minerals like iodine (for thyroid function) and selenium (for metabolism and antioxidant properties). It’s a whole food source of Vitamin D, which hosts a number of vital roles in our bodies and something that many people are deficient in.  We eat a lot of cod. It’s a mild, wild-caught, affordable white fish that offers my family a healthy dose of DHA + EPA.

I topped this cod with homemade pesto, popped it in the oven, and it was ready in 20 minutes. Fish is one of the quickest and easiest proteins to prepare on a busy week night. I served it over buttery spaghetti squash (a regular side dish for us) with tomatoes on the side. The kids aren’t big on tomatoes and they chose to have carrots instead.
