2+3 Meatballs


If you’ve got 2 pounds of meat and 3 spices on hand, then you can make these super easy, versatile meatballs in no time at all. My kids love these. You can use 2 pounds of one kind of meat (like all ground beef) or you can use a combination (like beef and pork, beef and turkey, pork and turkey) depending what you have on hand. Then all you have to do is add the spices, roll them into balls, and throw them in the oven. So simple. And what’s cool is that you can change the flavor of the meatballs depending on what spices you use – want Mexican Meatballs? Add salt, cumin and chili powder. Italian Meatballs? Salt, garlic, and oregano. You can also add your favorite sauce to give them even more flavor. Sometimes we eat them straight up using the basic recipe below, and sometimes we sauce it up a bit. I love using my homemade buttery enchilada sauce and then serving them over rice. Add marinara and serve over zoodles or barbeque sauce and serve with roasted potatoes. So many options. Your meatballs, your way. All you have to do is remember 2+3!

2 lbs your choice of ground meat
1 tsp salt
1 tsp garlic powder
1 tsp onion powder

Mix all ingredients. Roll into small balls and bake at 400 degrees for 15-20 minutes.

Leftovers are great in the lunchbox!
